ripe banana cutlet / ethapazham cutlet / nendran pazham cutlet

Banana cutlet is an easy to make snack which can be served as an accompaniment for tea.  It is easy to make and makes use of very few ingredients.  Mom usually makes it for my kids.  So this time when I was in Kerala, I asked her to make it and clicked it.  Her I have used jaggery syrup but you can also use sugar if you feel that the banana is not sweet enough. Usually at home, kids don't prefer to eat bananas as such.  So when it is given the shape of a cutlet, they find it more interesting and eat 4 - 5 cutlets within minutes.  This cutlet can be made only using nendran banana and not using any other bananas.  You won't get the texture and taste.  For other kid friendly snack, check here. Now to the recipe. Hope you like it.

Ingredients required

ripe banana / nendran pazham2 big
coconut (scraped)1/2 cup
cardamom powder 1/4 teaspoon
jaggery syrup(optional)1 - 2 teaspoon (depending on the sweetness of banana)
bread crumbs 1/4 - 1/2 cup
milk 2 - 3 tablespoon
ghee 2 tablespoon (as req. for shallow frying )

Method

1.  Steam cook the ripe bananas along with the skin.

2.  Peel off the skin, remove the inner black string and mash them well.

3.  Add the ingredients jaggery syrup, cardamom powder, coconut and mix it nicely.

4.  Roll into medium sized balls and flatten like cutlets.

5.  Dip in milk and roll in bread crumbs.

6.  Heat ghee in a pan.

7.  Shallow fry the cutlets till they become golden brown on both sides.
